Bottled at 56.4% ABV, this small-batch release layers baked apple, soft oak and warming spice into something bold, balanced and quietly complex.

The Story
This release began with locally sourced cider fruit from the Adelaide Hills and evolved into something unexpectedly special.
Like the rest of the Five Eleven Aged Series, it was never about rushing to market. Time, barrel influence and patience were allowed to shape the spirit naturally.
The outcome is simple:

What is apple brandy?
Apple brandy is a spirit distilled from fermented apple juice or cider, similar in concept to Calvados from France or American applejack. Five Eleven’s version starts with locally sourced Adelaide Hills cider fruit, fermented and then distilled before resting in barrel. The result is a proper apple brandy warming, textured and complex, not a sweet apple liqueur.
What does it taste like?
Baked apple, cinnamon and gentle vanilla upfront, with warming pepper spice and soft caramel notes developing in the middle. The finish is long and warming with lingering apple skin, oak and soft spice. It’s rich without being heavy.
Why is it bottled at cask strength (56.4% ABV)?
We bottle cask strength so nothing is lost, no dilution, no filtering out the character. You get the spirit exactly as it came out of the barrel. Add a few drops of water if you’d like to open it up and reveal more of the delicate apple notes underneath.
Is it a limited release?
Yes! this is a small-batch first edition. Once this batch is gone, it may never return in the same form. Apple brandy is part of our Aged Series, where each release reflects a specific moment in time.
How should I serve it?
Neat in a small glass, at room temperature, let it breathe for a minute before you sip. A couple of drops of water can open it up beautifully. It also works in a simple brandy sour with lemon juice and a touch of sugar if you want something longer.
